I love pumpkin pie. But I don’t like the way the super sweet pie hurts my belly. This year I am on a mission to make the most delicious pie I can con my family into loving this Thanksgiving. We’re holding a pumpkin pie bake off this year and I have a feeling we’re going to win! Fingers crossed 🙂
Ingredients
Yield: filling for 1 pie
- 1 cup pumpkin puree or equal to a 15oz can
- 3 eggs whipped
- 1/2 cup coconut milk
- 1/4 raw organic honey
- 1 tsp ginger
- 1 tsp nutmeg
- 1 tsp cinnamon
- 1/2 tsp cloves
- 1/4 tsp salt
Directions
- Preheat oven to 350 degrees
- Combine all ingredients
- Pour mixture into your cooled pie crust. Try our paleo almond meal pie crust!
- Bake 45 minutes or until a toothpick comes out clean
