Like most girls, I like chocolate. Love is actually probably a more accurate description. I find when I’m having a craving that I need to fix quickly these protein packed little date balls do the trick. You can use the walnut, date, salt and vanilla as a base recipe and add in your favorite flavors such as peanut or almond butter for an extra punch of protein. These are perfect to eat before or after a workout or bring along on a hike.
Ingredients
Yields: 10 balls
- 1 cup of pitted dates (Medjool dates are my fav)
- 1 cup of walnuts
- 1 tablespoon coco powder
- pinch of salt
- splash of vanilla
Directions
- Remove the pits from your dates
- Add dates, walnuts, coco powder, salt and vanilla to your food processor
- Grind mixture for about 30 seconds or until the dates are in small pieces
- Dump the contents from the food processor into a bowl so it’s easy to work with the dough
- Wet your hands and shape the dough into balls, bars or shapes
- They’re ready to eat right away or place in a covered container in the fridge. They should last about 5 days if you can make it that long without eating them 🙂
